How do you plan the calendar for high season and low season?

In high season the calendar tells people what they need to book now, and in low season it gives a reason to come out midweek. Posting the August terrace in a February in the sierra fails, and so does hiding the venue in July because «it is already full» while Thursday goes quiet. The floor marks closing months, terrace months and the days that historically need a push. The same Christmas carousel is still scheduled in March because nobody changed the season on the calendar.
