Should I photograph the venue empty or with service underway?

Yes, with service underway, when what you want to tell is how people eat there. Empty only opens the mise, and it does not close the story: a dinner with nobody in it is not the day. If guests are there, permission comes first; the floor and kitchen already know the visit happens in service. The miss in the sierra is a perfect empty room that does not look like Saturday. At Volver the story includes the room in service; the empty chapter, if it exists, is only the mise.
