How do you avoid reflections on the glass and the sauce of a chef's plate in Madrid?

The light is moved until the chef's sauce reads in the colour of the pass, not white. If the reflection sits on a glass that is not the plate, do not stop the plating for it.

The light is moved until the chef's sauce reads in the colour of the pass, not white. If the reflection sits on a glass that is not the plate, do not stop the plating for it. Ask the chef to leave the sauce as they send it and not to smooth it to kill a shine. In Madrid the sauce is flattened to kill the reflection and the chef says that is not the plate. The series keeps the sauce in the colour of the pass, without it having been ironed flat.
