Should I include pairings?

Yes, if it is a glass that is at the bar and the price shows beside the dish. No, if the suggestion is a bottle the cellar no longer has. Ask the floor for one glass per signature dish, from what is actually poured today. In Madrid the pairing names a wine that has run out and the server has to correct it. Under the dish sits that glass, with a price, and it goes when the bottle runs out.
