How do you name local dishes for guests from elsewhere?

The dish name stays, and underneath one line says what it is, without inventing an English name. The name is not translated if doing so makes it no longer the dish the kitchen sends. In the centre a house stew is turned into a line that does not describe the dish, and the table sends it back. Those dishes keep the house name and a line on what is in them and how they come.
