Colour is judged with a printed proof beside the linen, the wall or the bar, not by the glow of a screen. Do not approve the menu red if you have only seen it on a laptop.

Ask for a proof of the red and the black on the real paper and look at it in the dining room by day and at night. The burgundy on screen comes out brick on the paper and no longer matches the sign. The print sheet keeps the paper, the ink reference and a scrap of the proof for the next run.
