What does the “aesthetic” look mean for cafés and restaurants?

It is a fashion filter: a pastel palette, thin type and a heavily arranged photo, the same in many cafés at once. Applied to a dining room, it only works if the venue is already like that; if not, the menu lies about the room. In Madrid the menu is laid out in that café filter and the guest orders a plate that arrives another colour and another portion. The disappointment starts on the paper. If the venue is not that filter, the brand comes from its light and its crockery, not from the trend. The sheet crosses out the borrowed palette.
